It is popular to eat fresh vegetables and fruits now because people think that they are green and nutritional. How to eat these foods in a more nutritional and safer way? Today, I will give you some introductions.

The benefits of raw fruits and vegetables are attributed to detoxification, beauty, weight loss, blood pressure lowering and immune system strengthening. It is true that raw eating could keep the vitamin C and B vitamins in fruits and vegetables, because these vitamins are water soluble and they are easily destroyed by cooking. However, some fat soluble nutrients such as carotene and vitamin K could be absorbed only through cooking with oil. Raw meat and fishes often contain various bacteria and viruses, so it is risky to eat them.

When we eat raw vegetables and fruits, the most serious problem is the pesticide residue. People could soak them into clear water, bask under sunshine, and boil with hot water to reduce the pesticide residue. In order to maintain the integrity of the food, you can also soak with salt water or rice wash water to dissolve some pesticides.

However, not every raw fruit and vegetable is suitable to eat raw. First, lentils and other beans should be cooked to destroy the toxin; second, potatoes, yams, and sweet potatoes contain much starch and it is more difficult to digest raw ones; third, tomatoes, carrots and other foods are rich in carotene and it is more easily to be absorbed after heating; fourth, spinach, bamboo shoots and other vegetables containing oxalic acid are preferably to be boiled before eating.

Compared with poultry, eggs and milk, the raw seafood is relatively more secure and nutritional. Raw eating deep sea fishes could keep more nutrients. For example, the healthy unsaturated fatty acids in salmon will be destroyed under high temperature. It should be reminded that seafood and fish often contain cold-resistant bacteria. Eating raw shellfish will cause the occurrence of food poisoning and intestinal infectious diseases. The uncooked meat and eggs are easy to breed bacteria, so it is better to cook before eating. Milk should be boiled for three to five minutes.

Foods provide basic substances we need to keep alive, but diseases are also prone to hide in foods. Therefore, we should be cautious to food security.
