Trying to get more fiber into your diet? Try some of these hints:
Substitute high fiber or whole grain pasta for the regular pastas. They will never know the difference! You can find these alternative dry pastas at Wal-Mart or your local grocery store.
Switch out your white rice and use brown rice instead. This may take a little longer to cook but is well worth the time.
If you are making muffins, cookies or other desserts, add some ground flax seed, wheat germ, chia seeds (yes, chia seeds like the ones that grow on the outside of pottery – they are a great source of omega 3 and omega 6) or oatmeal.
This one is really sneaky, when you are making mashed potatoes add some cauliflower floweret’s. You cook them just same as the potatoes (until they are soft) and then mash. You can run the cauliflower through the food processor if you want, but you can just use your regular mixer. No one will ever know especially if you make them garlic mashed potatoes. I peel a few cloves of garlic and cut them into small pieces and boil them with the potatoes. They are great and I get so many compliments on my mashed ‘taters.
Making brownies? Instead of all the stuff on the back of the box, just mix one can of pumpkin and bake. These are some of the best brownies. Warning, they will be a little flat but they turn out more like fudge brownies. Or you can take one can of black beans and rinse them with water. Add new water to cover the beans and put the beans/water into the food processor and give the beans a spin. Add this to the boxed brownie mix, stir and bake.
Reduce the amount of sugar in baked goods recipes by one-third and replace half the fat (oil, butter) with half that amount of pureed figs, mashed banana or grated apple or apple sauce.
Serve fresh fruit for dessert or for snacks (this is not really sneaking it is rather obvious but good to do anyway). Cut up apples, peaches, plums, bananas, strawberries, pineapple or any other fresh fruit. Be sure to cut them into small pieces so that kids and the elderly don’t have a hard time eating them. Also for fruits that have an edible skin, don’t peel the skin off, there is lots of fiber in the skin.
