How Assorted Jelly Beans Are Made

Assorted jelly beans, such as the popular Jelly Belly candies, are a part of our modern culture that most people probably take for granted. The process of making such candy is very complex, and it wasn’t until the last century that candy makers truly perfected this art. Now anyone with a sweet tooth can find all the jelly beans their hearts desire in an online candy store or at their corner store. There are even jelly beans that are designed to provide energy for athletes. So just how are these sweet treats produced?

Most jelly beans are produced in a process that starts with the center, which is made by placing sugar, corn syrup and other ingredients in huge boilers. Once it is heated, the mixture is forced through pipes that take it to a starch casting zone where it is pumped into molds resembling the shape of the finished candy. These trays of molds are layered with corn starch before the mixture is pumped in, after which the beans are ready to be dried overnight. At this point the assorted jelly beans are cleaned, pushed through a moisture steam, coated with sugar and dried for another day or two.

Jelly beans are different from other types of candy because they have a shell coating, which is made by pouring the candies into engrossing pans where sugar is added little by little over time. It is at this point that the colors and flavors are typically added, although Jelly Belly candies are made so the flavor is distinguishable throughout the whole candy. Confectioner’s glaze is used to give the jelly beans their shiny appearance, which takes another two to four days.

Making all these assorted jelly beans is a time consuming process, but it is well worth it. Whether you go to an online candy store or your corner store you should always appreciate what goes into the making of these tiny sweets.
